Ingredients
  1. ¾ cup coconut flakes
  2. 2 pinches stevia
  3. 2 tbsp brown rice flour
  4. 1 tbsp dark chocolate chips
  5. 1 ½ egg whites
  6. 1 tsp pure vanilla extract
  7. 1/8 tsp salt
  8. ½ tsp orange zest

Instructions
  1. 1. Preheat oven to 325F.
  2. 2. In a medium bowl, combine coconut, stevia, flour, orange peel, and salt.
  3. 3. Add egg whites and vanilla and stir until combined.
  4. 4. Stir in dark chocolate chips.
  5. 5. Drop small mounds of mixture onto cookie sheets lined with parchment paper.
  6. 6. Bake at 325F for 12-15 minutes or until cookies are light brown.
  7. 7. Transfer to a wire rack and cool completely.
