Ingredients
  1. Chile Orange Dressing
  2. 1/3 cup orange juice
  3. 2 TBS seasoned rice vinegar
  4. 1 TBS honey
  5. 1 large clove garlic
  6. 1 TBS chopped jalapeno (preferably red, but green will do)
  7. 3/4 cup extra virgin olive oil
  8. Salt and fresh ground pepper to taste
  9. Salad
  10. 18-24 large shrimp, precooked, peeled, and chilled
  11. 1 head butter lettuce, roughly torn into bite-sized pieces
  12. 1 red or yellow bell pepper, sliced thinly or diced
  13. 1 medium tomato, diced
  14. 4 scallions, chopped
  15. 3 small ripe avocados
  16. Chile powder (optional)

Instructions
  1. - Place the orange juice, vinegar, honey, garlic, jalapeƱo in a small food processor, or blender and pulse until vegetables are finely minced.
  2. - With the machine running slowly add the olive oil and blend until emulsified. Add salt & pepper Chill.
  3. - Divide lettuce between six salad plates or bowls. Top with chopped large tomato and scallions.
  4. - Just before serving, slice each avocado in half, and each half into wedges. Arrange avocado, shrimp and bell pepper on top of each using 1/2 avocado and 3-4 shrimp per salad.
  5. - Drizzle with dressing, and garnish with a dusting of chile powder.
