Ingredients
  1. 1 egg
  2. 4 egg whites
  3. 1 tablespoon fat free sour cream
  4. 2 oz cooked, smoked or canned salmon
  5. 1 tablespoon fresh basil
  6. 1 tablespoon scallion, chopped
  7. Pinch of dried parsley
  8. Pinch of pepper

Instructions
  1. 1. Beat eggs and pour in skillet.
  2. 2. When omelette hardens, place salmon on top.
  3. 3. Top with sour cream and sprinkle basil, scallion, parsley and pepper.
  4. 4. Fold in half and cook until ready
