Ingredients
  1. 2 cup finely shredded medium shredded coconut
  2. 1/2 cup almond flour
  3. 1/2 cup unpasteurized honey
  4. 2 eggs
  5. 2 tsp pure vanilla extract

Instructions
  1. Pre-heat oven to 350F and grease a cookie sheet.
  2. Combine the coconut and almond flour in a bowl.
  3. In a separate bowl, combine the honey, eggs and vanilla.
  4. Add the liquid combination to the coconut and flour and mix together.
  5. Scoop out a tablespoon full for each cookie, flattening each (makes for a prettier cookie).
  6. Bake for about 15 minutes.
  7. Enjoy!
