Ingredients
  1. 2 Cups Silk Coconut Milk
  2. 2 tablespoons fresh lime juice (or other citrus on hand)
  3. 2 tablespoons lime zest
  4. 2 tablespoons raw honey
  5. 1 teaspoon ground ginger
  6. 1 teaspoon minced garlic
  7. 1 Tbsp fresh chopped Basil
  8. ½ teaspoon salt
  9. 1 teaspoon freshly ground black pepper
  10. 3-4 pound whole bone-in chicken (skin on), cut up

Instructions
  1. Preheat oven to 450 degrees F.
  2. Whisk together all ingredients (except chicken) until well combined. Toss chicken in mixture until coated. Arrange in oven-proof skillet or dutch oven. ( I lightly coated mine in coconut oil to ensure easy clean up.)
  3. Bake uncovered 30 minutes, or until chicken is done.
Notes
  1. For more AMAZING flavor, marinate the chicken in the coconut milk mixture up to a whole day ahead, refrigerated in a zip-top plastic bag.
