Ingredients
  1. 8 skinless Chicken Thighs
  2. Fresh ground Black Pepper
  3. 3/4 cup mild Salsa
  4. 1/3 cup smooth Peanut Butter
  5. 2 tbsp Lime Juice
  6. 1 tbsp Reduced-sodium Soy Sauce or Fish Sauce
  7. 2 tsp grated fresh Ginger
  8. 1/4 cup chopped fresh Cilantro
  9. Lime wedges

Instructions
  1. Season chicken with fresh ground black pepper and place in slow cooker.
  2. In a medium bowl, combine remaining ingredients except cilantro. Pour over chicken.
  3. Cover and cook on low for eight hours.
  4. Using a slotted spoon, remove chicken and place on serving platter. Pour sauce over chicken.
  5. Garnish with cilantro and lime wedges.
