Ingredients
  1. - ½ pound rice noodles
  2. - 5 cups organic vegetable broth
  3. - 1 bunch scallions, thinly sliced
  4. - Sea salt and freshly ground black pepper
  5. - 1 handful fresh cilantro leaves
  6. - 1 handful fresh basil leaves
  7. - 2 Thai or jalapeno peppers, thinly sliced
  8. - 2 fresh limes, cut into wedges
  9. - 2 cups shredded cooked lean boneless, skinless chicken (omit for vegan or vegetarian)

Instructions
  1. 1. Soak the noodles in very warm water until softened, about 10 minutes. Add half of the sliced scallions and season to taste with more sea salt and black pepper if needed.
  2. 2. Once the noodles are softened, drained them, put into a strainer set in a large bowl and fill the bowl with boiling water. Let sit for 5 seconds, drain and divide the noodles among 4 large soup bowls. Divide the hot broth among the 4 bowls of noodles. Serve immediately with all the additional ingredients on the side. Let each diner design their pho the way they want.
