Ingredients
  1. 2 cups uncooked quinoa
  2. 4 cups water
  3. 1/2 teaspoon salt
  4. 1 cup celery, sliced
  5. 1 (15-oz) can corn, drained
  6. 1 (15-oz) can garbanzo beans, rinsed and drained
  7. 3/4 cup cilantro, finely minced
  8. 1 heaping cup dried cranberries
  9. 1 (12-oz) package edamame, cooked and shelled
  10. 2 red bell peppers, diced
  11. 1 cup sliced almonds (or any nut you like)
  12. 3 Tablespoons extra virgin olive oil (more or less to taste)
  13. 5 Tablespoons lime juice (more or less to taste)
  14. salt to taste

Instructions
  1. Add the quinoa, water, and salt to a medium saucepan and bring to a boil. Once at a boil, turn the heat down to low and cover.
  2. Cook for 15-20 or until done. Transfer to a large bowl and fluff with a fork.
  3. Add remaining ingredients and toss to combine. Add salt to taste.
  4. Chill unto ready to serve.
